During the holiday season, aren't most of us running around like crazy people -- trying to get everything done? That can't keep happening!

We're quickly approaching the holiday season, which for many of us involve a lot of anxious stressfulness, filled with an increasingly frustrating waiting game of dealing with other peoples' busy schedules. Yuk. We hate when that happens, don't we? Oh, and parties... If you're like me, you love parties so you love when that (when you're invited to one) happens.

The holidays are kind of a time when you don't have time for being or feeling dependent on someone else who knows where the party is (when you don't), who has the recipe (when you don't have it and need it), and who knows how much something costs (which is usually important to most people these days). So, of course most of us hate it when we're dependent on others, but ce la vie... such is life. That's just how it sometimes goes. I know, I know... it's no fun and it can be a drag. But, it's a two-way street. Although... when we're in need of help, that's a place of vulnerability that no one likes to go.

I'm in the midst of planning how to become more sufficiently efficient throughout the holiday season. Doing so, I'm creating and looking for some easy to make, as-fast-as-possible, recipes that can be used for catering, as party hostess gifts, and at home -- for my own gatherings. I wanted to give you the best holiday lemon pie dessert recipe solution that could help you be more efficient throughout the holiday season, in a pinch.

I don't know about you, but I just can't begrudgingly trudge through the grocery store -- feeling ticked off that I'm exhausted, while I have to shop for all the ingredients necessary to make something (that could take half of a day to make) to take to a party... again. *Sigh* I'm sure we all go through this! But thankfully, I found a minute to come up with a plan.


This is the best holiday lemon pie dessert recipe solution and the best holiday dessert to serve at your holiday party. Or, to take as a hostess gifts to the holiday parties you're invited to. 

What I love about it is that it only takes 4 (four) ingredients to make it. It's also easy to construct because all you need to do it stir it; no need for mixers, blenders, and such. And, it's cooked and done in less than an hour; it just has to "set".

What is another winning reason this lemon pie recipe is the perfect holiday dessert? You can freeze it* and serve it later. 

Tart, sweet, cool, and creamy smooth... it's the kind of make, bake and take for an "I'm in a hurry", "make last minute" dessert that's wonderful with a hot cup of coffee or tea, to share with everyone at a party. Just grab it out of the oven right after it's been cooked -- put it in your car to take with you, and place it in the hosts refrigerator for the two hour time span (while you're having hors d'oeuvres and dinner) of the party host.

When you're pressed for time, this is the best and easiest to make homemade dessert ever! 



Best Holiday Lemon Pie Dessert Recipe Solution
(Printable Recipe)
Serves 8

Ingredients

3 egg yolks (or substitute Egg Beater)
1 can condensed milk
4 oz. fresh-squeezed lemon juice (or bottled lemon juice)
1 - 8oz. graham cracker or baked pie crust (homemade or store bought)

Instructions

1.) Preheat oven to 325 degrees.
2.) Beat egg yolks with a fork until smooth
3.) Gradually blend in condensed milk and lemon juice, stir until smooth
4.) Pour into completely cooled pie crust
5.) Bake for 30 minutes
6.) Remove from oven and cool for 1 (one) hour
7.) Next, chill in refrigerator at least 2 (two) hours
8.) Top with whipped cream, however much or little you'd like on top of pie and serve

Cater-Hater Tip: for an extra lemon kick, add finely crushed lemon drop candy to whipped cream (use 1/2 cup of candy; crush into fine powder to keep whipped cream light and airy). serve with regular fresh whipped cream or vanilla-flavored whipped cream for an added kick of delicious flavor. Also, keep pie refrigerated before and after serving.

To transport pie: wrap "caterer's style". First, lay down plastic wrap section "A-B". Lay plastic wrap section "C-D" on top of it -- in the opposite direction (forming a cross pattern). Place pie in the center empty space. Wrap section "A" over pie, then wrap section "B" over pie. Next, wrap section "C" over pie, wrapping section "D" over pie to enclose. As an extra precaution, wrap with aluminium foil in the exact same manner.


* - Freeze crust and lemon filling only. Decorate pie with whipped cream after thawing.
