Party Planning: Make DIY Sandwich Platters

As you're planning your DIY sandwich platters for your party, remember that as easy as sandwiches are to make, if you don't plan things right, you could end up in "sandwich hell"... scurrying around your kitchen (frantically), just seconds before your first guest arrives.

This is the "Year of the Sandwich"!

One of the coolest things about do-it-yourself sandwiches and sandwich platters is the "customization factor". Don't like pickles ? Check the "Leave them off" box and simply move on and make what you do like.

But, who doesn't like sandwiches? Right?
Especially good, homemade sandwiches served on the best fresh-baked bread.

Your Chicken Salad Sandwich Party Platter


This is a "big hit" croissant sandwich recipe. People love these sandwiches! Filled with homemade chicken salad, these buttery delicious sandwiches can be made on regular size croissant. But, a regular size croissant makes a pretty big sandwich. It's a shame when you find half-eaten sandwiches in the trash, isn't it? So, in order to cut back on food waste we suggest that you make these sandwiches with mini croissants. Add a leaf of curly leave lettuce to each sandwich and they're good to go. A medium-sized platter will serve 12 to 16 people.

Cater-Hater Tip: If you don't make plenty of backup chicken salad sandwiches - you'll likely find out that this was a big mistake. Chicken salad, especially good chicken salad seems hard to come by these days. And, have you ever met anyone who's said, " I don't like croissant"; probably not. So you better make a lot of these sandwiches because the usual consensus is, they're a major hit! And here's something else... Chicken salad Greek yogurt sandwiches are delicious and of course much healthier, so you should serve a few. And don't forget to add some avocado chicken sandwiches to your platter(s) too.

Your Tuna And/Or Chicken Salad Sandwich Wedges Party Platter


Here we go again. Be prepared to make some of your chicken salad sandwiches on white and wheat sliced traditional sandwich bread. Make them look more interesting by cutting them into wedges (like in the picture above). Naturally, these are super popular sandwiches, especially when the salad has the what most people would call the "right" ingredients; the tuna fish, a little mayonnaise (not too much, but just enough to make it creamy), some crunchy celery, and a dash of onion powder (better to add the onion flavor this way than to have onion haters see onions and freak).

We've made tuna fish (salad) this way a gazillion of times. And after serving our tuna salad recipe at parties, standing right there as guests come back for seconds (if not thirds and fourths), with smirks on our faces, as the "onion haters" go on and on about how much they detest onions and that just seeing them "turns them off", we don't have the heart to tell them we've added onions, since they love our chicken and tuna salad so much. We don't want anyone to get sick. So, the food allergy thing gets discussed when we meet with clients. People who have food allergies will usually ask what's in the food. But, in the event someone could be adversely affected by onions, we'd definitely warn them.

Your Turkey Pita Sandwich Party Platter


Turkey and chicken pita sandwiches are another big hit that your party guests will love. There are a lot of really great pita bread sandwich recipes out there. But, slices of turkey and chicken served on wheat and white pita bread with tomato slices, mayo, and lettuce is about all you really need. Going this route, it will add to the sandwich choices your guests will have to choose from.

Of course, we promote "doing things your own way" - so experiment if you want to. There are tons of pita recipes out there, that's for sure. We prefer the more "pure" pita sandwich recipes that don't have all kinds of fixings on them. There's nothing like a good pita bread sandwich

Your Wrap Sandwich Platter


Made with flour, water, and salt, Middle Eastern lavash bread (also referred to as lavosh bread), it's can be dicey to work with because it dries out fast. But, you can really go crazy making sandwiches with it - adding anything that your little heart desires, that you think your guests will enjoy.

Start by laying a whole lavosh on a properly sanitized counter surface. Then spread mayonaisse, or some other spread of your choice, on the entire surface. Next lay thinly sliced roast beef or turkey on the longer end of the lavosh. Add slices of your favorite cheese and lettuce leaves, then roll it up tightly. Wrap in Saran Wrap (plastic wrap) and refrigerate for 2 to 24 hours. After refrigeration, cut each roll into one (1) inch diagonally sliced pieces. Done correctly, you should get about fourteen (14) wraps out of one lavosh.

Your Tea Sandwich Platter


Known as "appetizer sandwiches" or "mini sandwiches" and "finger sandwiches", tea sandwiches are smaller bite-size sandwiches that party guests really love. Somewhat timely to make, you don't have to wonder, "What exactly is a tea sandwich?". You can make various sandwich recipes that you like, cutting them into smaller sandwiches because that's pretty much what a tea sandwich is. We really like mini-club sandwich tea sandwiches. And egg salad tea sandwiches are big buffrt movers (being eaten by a lot of people too). We haven't met a person yet who hasn't enjoyed them.



Your Assorted Sandwich Platter


This ones a no-brainer. Customize your platter with an assortment of the sandwiches listed above you've got another hit on your hands. Party guests like choices, so assortment platters are a good choice. Add the sandwich assortment platter idea to your sandwich party tray idea book. Carlo's Easy & Delicious Low-Cal Tuna Salad Recipe

(Printable Recipe)
Serves 10

1 - 20 ounce can solid Albacore tuna packed in water
3 - 1/3 stalks celery (or substitute 1 to 1- 1/2 teaspoons of celery seeds)
6 - 2/3 tablespoons finely chopped dill pickles
5 - tablespoons Hellmann's mayonnaise (add more if you like it creamier)
3 - 1/3 tablespoons lemon juice
3 - 1/3 teaspoons Dijon mustard
6 - 2/3 teaspoons minced fresh dill
2 - teaspoons onion powder
2 - 1/3 teaspoons fresh ground black pepper

Drain tuna. Then place into a glass or plastic bowl and break it into pieces with a fork. Add the other ingredients and stir them in until everything is combined. Serve tuna fish salad on any type of bread you choose. Or serve it on top of salad greens.* - About 110 calories per serving.
