No-Bake Chocolate Peanut Butter Cookies

What a difference these no-bake chocolate peanut butter cookies make.

I can't live without them.

A cliche maybe, but one well suited to any novice party planner or professional catering business. Especially when a client "... doesn't want to serve anything chocolate", but decides to add it to the menu the day before or day of their party or special event.

As a party expert who retraces the steps of every party, large or small, that expounds on every new development, it's an understatement to admit that no bake chocolate and peanut butter and oatmeal cookies are an important staple to any menu repertoire.

Remember... This is a great recipe for last minute plans. You can make one big cookie and jazz it up with all kinds of delicious fresh fruit garnish with freshly made whipped cream. Or, make cookies in individual servings.

No-Bake Chocolate Peanut Butter Cookies
Serving size: 1 big cookie or 36 cookies
(Printable Recipe)

1/3 cup unsweetened cocoa powder
1/4 cup nonfat dry milk
3/4 cup sugar
1/4 cup light corn syrup
1/2 cup skim milk
1/2 cup peanut butter (crunchy or regular)
1 tablespoon vanilla extract (not vanilla flavoring)
3 and a half cups oats (old-fashioned or quick-cooking)



1.) Bring first six ingredients to a boil in a medium saucepan and continue to boil 1 to 2 minutes. Remove from heat.
2.) Stir in vanilla extract.
3.) Put oats in a medium bowl. Pour hot mixture (in step #1) over oats and mix well.
4.) Drop spoonfuls (or one big amount) onto wax paper and allow to cool.
5.) Transfer to an airtight container and refrigerate.


Cater-Hater Tip: These chocolate no bake cookies have less (saturated) fat, so they won't set up solid at room temperature like traditional no-bake cookies. Warning: Chocolate peanut butter no bake cookies like these are delicious and gooey.
