Leftover Turkey with Plum Yogurt Sauce

I don't know about you, but I've just about had it with seeing the same turkey leftover recipes over and over, and over again. So okay Cater-Hater subscribers, and "search and stop-by" readers, time to try something different, wouldn't you say?

For me, the answer to the question above is definitely, Hell yes! Because during the holiday season, I'm like you - I'm really busy! Add to that, tons of holiday preparation for me and my crew to do and planning and catering parties for clients, too. It's crazy, but I love it and wouldn't have it any other way.

After running around to meet deadlines the last thing you need is to be tired, and then bored too, by making the same old, same old leftover turkey recipe for dinner. Especially when you could make something easy, quick, and new too, right?

This isn't just another one of "those turkey recipes". Here's a different, brand new leftover turkey recipe for you to try: Leftover Turkey with Plum Yogurt Sauce. It's really easy and quick to make. And better still, it's really delicious, too.

Leftover Turkey with Plum Yogurt Sauce
Serves 4 to 6

Leftover turkey meat
Spray oil (Pam)
1 tablespoon olive oil
1 shallot, finely minced
2 cloves garlic, finely minced
1 teaspoon kosher salt
1/4 cup fat-free chicken broth

1 teaspoon dried thyme
2 teaspoons Italian seasoning
1/2 cup plum jelly
1 cup plain yogurt
2 tablespoons finely chopped Italian flat leaf parsley


1.) Spray oil (Pam) into a dry, non-stick skillet and reheat turkey meat over medium-high heat (it does not have to be fully heated at this point).
2.) Remove to a platter.
3.) Turn heat down to medium and add olive oil.


4.) Add shallots and saute until translucent.
5.) Add garlic and salt and continue to cook for another minute or two.
6.) Add broth and scrape up any brow bits from the bottom of the pan.
7.) Add thyme, Italian seasoning and jelly to the pan and thoroughly combine.
8.) Add turkey and turkey juices back to pa and cover.
9.) Turn heat down to simmer and cook for 15 to 20 minutes.
10.) Turn off heat.
11.) Stir in yogurt.
12.) Remove to a bed of rice or noodles plated on a serving platter and top with parsley.
