Cranberry Cream Pie

Did you buy fresh whole cranberries to make cranberry sauce for your holiday season dinners? Or do you purchase canned cranberry sauce?

Catering causes me to think about food in volume. I never know who or how many will stop by on Thanksgiving, Christmas and New Year's Day.

Never fail, my experience has been that when neighbors and friends know that I've cooked, they stop by. Consequently, I buy more than necessary to feed everyone and it sort of turns into a party.

Don't get me wrong. I'm not complaining because I like to cook. And more importantly, I like to share.

What it all boils down to is that I shop for home holiday meals as if I'm shopping for a party, which is basically in bulk. I make everything from scratch, including the cranberry sauce that I prepare. The bags of Ocean Spray Cranberries that I buy are chock full of cranberries. There are always some left over, so I sometimes make Cranberry Cream Pie.

Here's my recipe, listed as one of the "... yummy pie recipes from those in the blogosphere..." by Foodista.com on National Pie Day, December 1st, 2009.

Cranberry Cream Pie
Makes 8 servings
(Printable Recipe)


1 and a half cups Ocean Spray Cranberries*
1 cup sugar
1/2 cup all-purpose flour
1/8 teaspoon salt
2 and 1/4 cups of milk
2 eggs, lightly beaten
1/2 sour cream
1/4 cup butter, diced
1 - 9 inch pie crust, baked
1 cup heavy whipping cream
3 tablespoons confectioner's sugar
1 teaspoon vanilla extract


1.) Rinse cranberries with water and drain.
2.) In a medium heavy-bottomed sauce pan, combine sugar, flour and salt.
3.) Gradually stir in milk and eggs.
4.) Cook over medium heat, stirring constantly,
until the mixture thickens and boils. Boil and stir 2 minutes. Remove from heat.
5.) Stir in sour cream, butter, and carefully stir in cranberries; pour mixture into baked pastry shell.
6.) Cover with plastic wrap and refrigerate overnight.
7.) Whip heavy whipping cream until soft peaks form; fold in confectioner's sugar and vanilla. Swirl over the top of pie.


* - Substitute a similar product.

That's it! It's super easy. So now you know how to make cranberry pie, but a very different version. Unlike plain cranberry pie recipes, and even the best apple cranberry pie recipes , this Cranberry Cream Pie is easy and quick to make - and a lighter, better version.

It's not labor intensive, so it's more attractive than going through the trouble of making
German cranberry pie, cranberry walnut pie or cranberry pecan pie. Cranberry apple pie with a pecan crust and cranberry apple pie with a walnut crust and crumble top are unfortunately just as troublesome to contend with.

Other cranberry pie recipes may taste good but look messy and unappetizing, like the ones with
cranberry sauce pie filling. I made a no bake cranberry pie recipe and although it was easy to make, after having made it I can safely say that Cranberry Cream Pie beats it in a taste test by far.

So whether you make a
rustic apple cranberry pie, cranberry banana pie, a cranberry pecan pie, or a apple cranberry crumb pie - know that ending your dinner with this Cranberry Cream Pie recipe will put your meal over the top!

There's
cranberry pie w/ cream cheese and cranberry mincemeat pie with eggnog cream, and then there's Cranberry Cream Pie! Put on a pot of coffee, plate up your Cranberry Cream Pie, and sit back and get ready to receive lots of compliments. It happens to me, every time.
