You know me! As your catering, event planning and party writing connection, I'm located in the "City of Layoffs" - otherwise known as Detroit, home of the government funded auto companies that took bailout cash, so I'm always looking for delicious and fast recipes.
Let me tell you, this recipe doesn't cost my clients "an arm and a leg", so this recipe has really helped a lot.
Expensive dinner parties and "know-no-limits" fancy-schmancy wedding receptions are on the wane.
There's an upsurge of hors d'oeuvre parties due to the tanked economy.
If easy and quick, as well as economically-minded parties and special events are important to you - you're going to love this recipe. You'll also love this chicken and bacon barbecue infused popper if you love the combination of chicken and bacon. It's all of these things!
This one is the one. It's an easy and quick to make chicken and bacon recipe that will be a big hit with your guests. Because as easy-to-make as this Chicken - Bacon Barbecue Poppers appetizer is, it's not one that you'll find at every party that you'll attend.
You could substitute turkey in place of chicken if you'd like. Use whichever meat you have handy. It really doesn't matter. The smokey flavor of the bacon along with a delicious barbecue sauce make this recipe a big hit.
Try it! Then write back, and let me know what you think.
Chicken-Bacon Barbecue Poppers
(Printable Recipe)
4 boneless, skinless chicken breasts
1 pound sliced bacon
2 tablespoon barbecue sauce
1/2 cup firmly packed brown sugar
1.)Preheat oven to 350 degrees. Spray a flat roasting rack with non-stick cooking spray, place on a foil covered roasting or broiling pan and set aside.
2.) Cut the chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. It is easiest to do this before you separate the bacon into slices.
3.) Wrap a piece of bacon around each chicken cube and secure with a wooden toothpick.
4.) Combine the barbecue sauce with the brown sugar. Drop each meat skewer into the mixture and toss gently with your fingers until completely coated.
5.) Arrange the poppers on the rack and bake at 350 degrees for 30-35 minutes, until the bacon is crisp and the topping browned.
