So, we're all going to need some holiday time-saver solutions, especially super easy recipes as meal solutions - especially for those of us who'll work throughout the Yuletide season. Because I'm always busy helping people with their holiday parties.
If I don't get started now, it will never happen. So I'm starting to prepare.
Eventually, it's going to be turkey this, and turkey that. Turkey soup, turkey Benedict... Turkey, turkey, turkey, turkey-turkey!
Believe it or not, I'll have my Christmas tree up the day after Halloween. And I've already started pulling my holiday "staples", my holiday recipe cards. I just found one of my favorite quesadilla recipes and "lifesavers" - my recipe for super easy and quick turkey quesadillas.
For someone like me -quesadillas are great. In a pinch, quesadilla recipes are always good because they're usually inexpensive and quick to make type recipes. And they're super quick and easy recipes for a party. So when I ran across my super easy and quick turkey quesadilla recipe, I thought you might want to make it, too.
See, just last week I once again made homemade chicken and noodle soup, so the idea of turkey soup isn't getting my bloomers twisted - if you know what I mean.
If you feel like I feel, then sharing my turkey quesadilla recipe with you would be the befitting thing for me to do. I've used this recipe a couple of different ways; as an entree and served as quick and easy appetizers - a simple and super easy party snack.
What's also good about this recipe is that you won't need any quesadilla makers or any out-of-the-ordinary, special equipment. Because not only can this recipe be made in a skillet, it's perfect for quick and easy meals, so it's also a super easy main dish recipe to make for kids. Super Easy and Quick
Turkey Quesadillas
(Printable Recipe)
Serves 8
8 oz. cooked turkey chunks
1/2 cup chopped onion
1 cup canned black beans, drained and rinsed
1/2 pkg. McCormick 30% Less Sodium Taco Seasoning Mix
8 (7-inch) whole-wheat tortilla shells
1 (8oz.) bag Sargento Reduced Fat Shredded 4 Cheese Mexican Blend, divided
Toppings: Daisy Brand Light Sour Cream and Garden Fresh Gourmet Jack's Special Salsa
1.) In a medium skillet over medium heat, cook turkey and onion for 3 to 5 minutes or until onion is browned. Remove from heat. Stir in black beans, taco seasoning and 1/4 cup water.
2.) Spoon 1/4 cup of the turkey mixture on half of each tortilla. Top with 1/4 cup of the cheese. Fold tortilla i half. Repeat with remaining ingredients.
3.) Coat a large skillet with nonstick cooking spray. Add 2 folded tortillas in a single layer. Cook over medium heat 2 minutes per side or until browned. Press down with a spatula to flatten. Repeat with remaining tortillas. Cut cooked tortillas in half, forming 16 quesadilla quarters. Serve with sour cream and fresh salsa, and any other fixin's that you choose.
Cater-Hater Tip: Customize your quesadillas. Add kernel corn, jalapeno peppers, shredded lettuce, and anything that you'd like.
This is what I call my "Thanksgiving Mexican quesadillas", for when I need to make quick and easy dinners or to serve as an hors d'oevure. It's a good quesadilla recipe for turkey leftovers that you can expand on. Add scrambled eggs and viola! You've got breakfast quesadillas.
