Easy and Quick Buffalo Chicken Dip

I can hardly think of an All-American style restaurant that doesn't serve spicy or hot chicken wings, can you?

Yet, when I thought about that I couldn't (think of a place that doesn't serve chicken wings), it occurred to me that I've never met anyone who doesn't like Buffalo Chicken; not to fail to mention anyone who wouldn't like Buffalo Chicken Dip.

I mean, everyone knows that one of the most popular items on any restaurant menu is the Buffalo chicken appetizer.

Let's cut out the bones and whatnot, shall we?
And let's get right to the heart of it... The good stuff!


I have to tell you, I'm a serious hot sauce snob. I only like and buy Frank's Redhot hot sauce. My love for it began when I was in the 4th grade. And it ties back to my big brother, Johnie Jr.. You see, my brother was my hero. I say "was" because he died from a brain aneurysm in Lansing, Michigan in February of 1973.

He was only age of 24 years old. That's pretty young, so it came as a big shock. But he left behind a gorgeous wife, my sister-in-law, Brenda, and two very handsome little boys, Shawn Martin and John Allen. Eight years before he died, my parents threw him out of the house when he was 16 years old. I was only 8 years old then.

He swore for years that he had seen my dad with another woman, when he was out partying with some of his friends one night. Irregardless, it had become too toxic. They were like one big vat of oil and vinegar. It got to where he didn't get along with either one of my parents. I guess you can understand his anger toward my dad. But I think he was angry at my mom too, somehow. And if I could guess, I would say that it was because she didn't leave, staying with my dad until the year after my brother died. Anyway, because of our eight year age span and because I'm a girl, he never wanted to play with me. So, I basically grew up alone. But he was the only sibling that I ever had to grow up with and I miss having him in my life - even to this very day.

So yeah, he was everything to me. I practically worshiped the ground that he walked on. There wasn't much that he couldn't do and do well. Super talented in so many ways and known by everyone for being really handsome, in my opinion he was the epitome of "cool". I tried to emulate him in as many ways as I could. He knew that, and he would give me "challenges" to try to live up to. And if you ever thought the world of your sibling, like I did - you may have tried to act just like your brother or sister, too.

My brother sometimes ate strange combination's of food, knowing full well that I'd try my best to copy him. And he'd get a kick out of watching me try to do it, too.

That's where Frank's Redhot came in. I mean, he genuinely really liked it. But Frank's Redhot for a 4th grader is really a bit much. But he'd do this "thing" with plain Lay's Potato Chips.He'd open a bag of potato chips, sprinkle Frank's Redhot inside, close the bag shut and shake it, then eat the potato chips. Talk about hot! But, you know I had to try it.

Frank's Redhot on potato chips wasn't my favorite thing, but trying to prove myself - I'd eat it anyway. But when he put Frank's Redhot on our mom's fried chicken... Wow! Now that was good! It was then that I fell in love with Frank's Redhot, and began to use it all the time. My parent's couldn't believe it.

Mission accomplished, however. Because Johnie Jr. said I was "cool".


These days my food is highly scrutinized. I'm a caterer, so people expect what I serve them to be the best. And this easy and quick Buffalo chicken dip is highly complimented, always.

Isn't it always an added plus when you can save time? Well, this recipe does that. Your prep time for this recipe is 5 minutes. And it's great! Because it only takes 20 minutes to bake.

This Buffalo chicken recipe (the King of all chicken recipes!) won't leave you (or your guests) disappointed. It's one of the easy chicken recipes out there.

Easy and Quick Buffalo Chicken Dip

Makes 4 cups of chicken dip
(Printable Recipe)


1 pkg. (8oz.) cream cheese, softened
2 cans (9.75oz. each) Swanson's white premium chunk chicken breast, drained
1/2 cup any flavor Frank's Redhot sauce
1/2 cup bleu cheese salad dressing
1/2 cup crumbled bleu cheese
1/4 tsp.minced garlic
1/2 tsp. finely chopped fresh parsley
Assorted fresh vegetables, pita and tortilla chips, and crackers


1.) Stir cream cheese in a deep baking dish until it's smooth. Stir in remaining ingredients.
2.) Bake at 350 degrees for 20 minutes until hot and bubbling. Stir and serve garnished with chopped fresh parsley, with crackers, chips and vegetables. If you prefer a cold Buffalo chicken dip recipe, serve it room temperature or cold.
Note: When you serve this chicken Buffalo dip with Frank's, if your friends and family members like spicy food, make a larger serving. You could also replace canned chicken with rotisserie chicken.

So if you wondered, "Where can I find the recipe, Buffalo chicken dip, to be used with chips?", or you were looking for a cream cheese chicken dip recipe, you've found it! And I suppose if you wanted to, you could even make (and serve) it in a crock pot.

I took this recipe a step further.
I made it into Buffalo chicken burgers, served with a slice of pineapple and sweet bell pepper slices.
Boy, was it ever good!


This recipe is always a big hit for me at parties, especially Super Bowl parties. Some of the guys that attend the parties even ask for the recipe! And when one guy found out how easy it is to make, he now makes it for every party he's invited to. He told me that his buddies call it, "his specialty".
